Black Plum Soup with Roasted Plums and Floating Island

Black Plum Soup64oz

| | Black Plums, cut into half and remove seeds

| | Black Plums, cut into half and each half into 3 wedges

Place all the fruit on a sheet pan with kitchen paper and sprinkle with a little sugar. Put fruit in a pre-heated 350-degree oven and roast until soft and a little caramelized. About 10 min. Remove the fruit from the oven and hold the wedges in the refrigerator to be used to garnish the bowls. Place all ingredients and the rest of the fruit in a stockpot. Bring to a boil, turn down to simmer and reduce by one halt. Puree with a blender and strain the soup thru a china cap. Cool down over an ice bath.

Heat sugar and water in saucepan until softball stage. While syrup is cooking, beat the egg whites to soft peaks. With the machine running, very slowly beat in the hot syrup. Continue beating until the meringue forms firm peaks.
